dc.description.abstract |
Tato diplomova prace je zaměřena na analyzu vybranych složek chmele vicenasobnou headspace mikroextrakci tuhou fazi, ve spojeni s plynovou chromatografii a hmotnostni detekci. V teoreticke časti jsou popsany chmel a některe jeho odrůdy, chmelove složky, vliv těchto sloučenin na lidske zdravi a jejich využiti. Jsou zde popsany metoda MHS-SPME a kolorimetricke měřeni barevnosti potravin. V prakticke časti byla nejprve provedena optimalizace metody pomoci volby vhodneho objemu vzorku a teploty extrakce. Dale je popsana kvalitativni analyza odrůd chmele pomoci GC-MS. Vysledkem byly chromatogramy s aroma profily chmelovych odrůd. Dale jsou prezentovany vysledky kvantitativni analyzy linaloolu, beta-karyofylenu a karyofylen oxidu ve vybranych odrůdach chmele. Na konci je popsano měřeni barevnosti a porovnani vysledků. drcenych chmelovych granuli pomoci spektrofotometricke kolorimetrie. |

This thesis is focused on the analysis of selected components of hops by multiple headspace solid phase microextraction, in connection with gas chromatography and mass detection. The theoretical part describes hops and some of their varieties, hop components, the effect of these compounds on human health and their use. The MHS-SPME method and colorimetric measurement of food color are described here. In the practical part, the optimization of the method was first carried out by choosing the suitable sample volume and extraction temperature. The qualitative analysis of hop varieties using GC-MS is also described. The result was chromatograms with aroma profiles of hop varieties. The results of the quantitative analysis of linalool, beta-caryophyllene and caryophyllene oxide in selected hop varieties are also presented. At the end, the measurement of color and comparison of the results of crushed hop granules using spectrophotometric colorimetry is described. |
