dc.description.abstract	Tato diplomová práce je zaměřena na analýzu biogenních aminů ve vzorcích piva vysokoúčinnou kapalinovou chromatografií s detekcí diodovým polem. Teoretická část práce se zabývá biogenními aminy v potravinách, zejména v pivu, možnostmi stanovení a extrakce těchto látek z potravinové matrice a způsoby derivatizace. Dále je zmíněna výroba piva, původ a stanovení biogenních aminů v pivu. V experimentální části byly nejprve optimalizovány podmínky derivatizace biogenních aminů dansylchloridem, zakoncentrování připravených derivátů technikou MEPS a úpravy vzorků piva před derivatizací. Optimalizované podmínky byly použity pro analýzu reálných vzorků piv. Výsledky analýzy vzorků jsou prezentovány v další části práce, kde byl také porovnán obsah biogenních aminů v jednotlivých vzorcích.	cze
dc.description.abstract-translated	This thesis deals with the analysis of biogenic amines in beer samples by high-performance liquid chromatography with diode-array detection. The theoretical part of this thesis deals with biogenic amines in food, especially in beer, the possibilities of determination and extraction from the food matrix and methods of derivatization. Beer production, origin and determination of biogenic amines in beer are also mentioned. In the experimental part, the conditions of derivatization with dansyl chloride, extraction of derivatives using the MEPS technique and the treatment of beer samples were optimized. The optimized conditions were used for the analysis of beer samples. The results of the sample analysis are presented in the next part of the thesis, where the concent of biogenic amines in individual samples was compared.	eng
