dc.description.abstract	Tato diplomová práce se zabývá stanovením resveratrolu a dalších významných fenolických látek ve vínech z České republiky pomocí kapalinové chromatografie, a také stanovením jejich antioxidační aktivity a celkového obsahu fenolických látek. V teoretické části jsou uvedeny základní charakteristiky vína, popis resveratrolu a dalších antioxidantů, stejně jako princip kapalinové chromatografie a metod stanovení antioxidační aktivity. V experimentální části je popsána analýza 16 vín, ve kterých byl stanoven resveratrol a dalších 5 fenolických látek pomocí systému HPLC CoulArray. Dále je zde popsáno stanovení celkového obsahu fenolických látek ve vínech, stanovení antioxidační aktivity metodami ABTS, DPPH a FRAP a přímé stanovení antioxidační aktivity EPR spektrometrií.	cze
dc.description.abstract-translated	This thesis deals with the determination of resveratrol and other important phenolic compounds in wines from Czech Republic using liquid chromatography and it also deals with the determination of their antioxidant activity and total phenolics content. In the theoretical part some basic characteristics of wine, description of resveratrol and other antioxidants are given, as well as the principles of liquid chromatography and methods for antioxidant aktivity determination. In the experimental part the analysis of 16 wines is described, in which resveratrol and another 5 phenolic compounds were determined using the HPLC CoulArray system. Further, the determination of total phenolics content, determination of antioxidant activity using methods ABTS, DPPH and FRAP, and the direct determination of antioxidant activity using EPR spektrometry are descibed too.	eng
