| dc.description.abstract-translated | New electrochemical methods for analyzing substances present in spices using carbon-based electrodes were developed. The method for determining trans-anethole is based on the anodic oxidation of the compound in acetonitrile at a carbon paste electrode modified with sodium dodecyl sulfate (40 % w/w). The mechanism of the electrochemical oxidation was elucidated using a glassy carbon electrode. The voltammetric determination of trans-anethole under optimal conditions was characterized by the linear range of 2.3−196.1 µmol L−1, the sensitivity of 0.1122 µA L µmol−1, and the detection limit of 0.7 µmol L−1. The standard addition method was used to assay the analyte in anise and fennel seeds, and the results agreed with a reverse-phase HPLC. Electrochemical detection of safranal, which is present in saffron spice, was carried out at glassy carbon (GCE) and boron-doped diamond (BDD) electrodes in organic solvents. The sensitivity of the detection was higher at the GCE than at BDD and in acetonitrile than in ethanol, respectively. A linear range of 1−300 µmol L−1 of safranal was achieved at the GCE. | eng |
