V této práci byl aplikován meta-analytický postup (poměr výsledků, PV) pro zjištění efektu teploty sušení na obsah karotenoidních látek a antokyanů v ovoci a zelenině u studií publikovaných v letech 1990-2016. Hodnoty PV klesaly s rostoucí teplotou sušení v porovnání s obsahem látek v syrovém produktu. Při srovnání obsahu karotenoidů a antokyanů v produktech sušených při nízké teplotě (40°C) a vyšších teplotách (50°C-80°C) nebyl zjištěn významný rozdíl v obsahu sledovaných látek. |

The effect of drying temperatures on carotenoid and anthocyanin contents in fruits and vegetables was evaluated using meta-analytical approach (response ratio, RR). Relevant research papers were obtained by review process. RR values decreased with the increase in drying temperature in comparison with the raw counterparts. No significant differences were found between the content of bioactive componds in products dried at low (40°C) and higher (50°C–60°C) temperatures. |
