Cílem práce je provést sondu do šlechtického stravování na základě rozboru kuchařské knihy Filipiny Schlikové z let 1790-1843. Úkolem bylo zmapovat změny ve šlechtických kuchyních v souvislosti s příchodem nových druhů potravin. Rozbor pramene nám umožnil pozorovat nově příchozí zahraniční impulsy, které ovlivňují nejen skladbu pokrmů podávaných během dne, ale i samotné stolování. Součástí mé práce je také edice vybraných receptů z hraběnčiny kuchařky. |

Following essay deals with the boarding habits of aristocracy in 19th century. The first part of the work focuses on perception of food in general. We don´t only study primary function of food, which consist in satiating one of basic physiological needs, but we also devote to social, cultural and religion meaning of food too. In the next chapter we try to map the changes that took place during 19th century, especially in aristocratic and noble feeding habits. Next part of the work is devoted to the House of Nostitz and its history till the 17th century. The biography of the countess is the main them of this chapter. Foreign and Czech culinary documents, their authors, a signification or their structure are subject of the third chapter. Last two chapters are based on analysis of cookery - book of the countess Schlik (between the years 1790 ? 1843). |
